1/2 kilo carrots, peeled and sliced
2 large onions, chopped
4 stalks celery, sliced
3 cloves garlic, minced
8 tomatoes, peeled and chopped
5 cups green cabbage, sliced thin
1/2 pound green beans, chopped with ends removed.
6 cups chicken broth
3 medium zucchini, chopped
3 cups spinach leaves, chopped
Salt and pepper for seasoning Directions: - Put the carrots, celery, tomatoes, garlic, onions, green beans and chicken broth in a in a large soup pot and bring to a boil. Reduce the heat to medium and cook the soup for approximately 30 minutes. Add in the seasoning and the rest of the soup ingredients and cook for an additional 10 to 15 minutes. - Vegetable soups are hearty and nutritious, but must be refrigerated.
