Kidney bean recipes
Kidney beans are brownish red beans which are shaped like kidneys. They are available to buy in a tin or as dry beans. This article contains kidney bean recipes, which for simplicity all require tinned beans.

Jerk chicken with rice and peas
The kidney beans in this Jamaican dish are traditionally known as peas.
Ingredients
- vegetable oil for deep frying
- 12 chicken legs
- 200g jerk seasoning
- 2-3 tbsp vegetable oil
- 1 onion, finely chopped
- 300g/10½oz long grain rice
- 400ml water
- 400ml coconut milk
- 400g tin kidney beans, rinsed and drained
- 3 tbsp chopped fresh thyme
- salt and pepper
- fresh coriander leaves, to serve
Method
- Heat the oil in a large pan until a piece of bread sizzles and turns golden when dropped in. Be very careful and never leave hot oil unattended.
- Toss the chicken legs in the jerk seasoning and drop into the oil to deep fry for around 12 minutes, turning occasionally. Remove and drain on kitchen paper.
- For the rice and peas, heat the oil in a large saucepan with lid and soften the onion.
- Stir in the rice, then add the water and bring to the boil.
- Add the coconut milk, kidney beans and thyme. Reduce to a simmer. Cover and cook for 20 minutes or until the rice is done.
- Season to taste and then serve with the chicken, garnished with fresh coriander.
Chilli con carne
Ingredients
- 4 tbsp vegetable oil
- 500g 2oz beef mince
- 2 onions, diced
- 2 garlic cloves, crushed
- 2 carrots, diced
- 2 peppers, diced
- 1 tsp chilli powder
- 1 tsp cumin
- 1 tsp cinnamon
- salt and pepper
- 1 x 400g can red kidney beans, drained
- 2 x 400g cans chopped tomatoes
Method
- Heat half the oil in a frying pan over a medium heat and fry the mince until browned all over.
- Heat the remaining oil in a large saucepan over a medium heat and soften the onions, garlic, carrots, and pepper.
- Stir in the chilli powder, cumin and cinnamon, season with salt and cook for five minutes.
- Add the mince to the pan with the vegetables and stir in the chopped tomatoes. Cover and simmer for around an hour, stirring occasionally.
- Check the seasoning, adding salt and pepper if required. Stir in the kidney beans and leave for a further 15 minutes.
- Serve with soured cream and nachos or rice.
