Buying the rib
Where to buy?
A prime rib dinner (also known as a standing rib roast in the UK) is a classic meat dish. When buying prime rib, it is best to buy from your local butcher as the aged beef sold in these shops is much superior to the cheaper cuts sold in many supermarkets.
What to look for?
An experienced butcher will show you what to look for and will even be able to suggest some prime rib beef recipes. Try and buy meat which shows some marbling of white fat. This will prevent the meat from becoming too dry when cooking and will be lovely and tender.
Preparation
Before we tell you how to cook a rib roast, it is important to spend some time in preparing the perfect prime rib. Allow the meat to come to room temperature before cooking. Remove the meat from the fridge at least two hours prior to cooking.
Ingredients
Prime rib (1lb per person)
8 garlic cloves
olive oil
salt
pepper
1 litre beef stock
Half bottle red wine
3 tablespoons butter
Preheat a roasting dish to 260 C
Method
Use a pairing knife to cut slits into the meat. Slice the garlic cloves in half and insert them into these slots. Rub the meat with olive oil and generously season with salt and pepper.
Roast the joint for 20 minutes at 260 degrees. Then reduce heat to 160 C. Cover with tinfoil and roast for 15 minutes per pound of meat. If you have a meat thermometer, you can check the meat temperature.
65-70 C centre temperature is a medium rare joint.
When the cooking time is up, you'll need to rest the joint for twenty minutes before serving. Transfer meat to a carving board and put the roasting tray over medium heat on your stove top.
We will now make the "au jus" sauce. Add the beef stock, red wine and butter to the beef juices. Stir with a wooden spoon, loosening any bits of meat or juices that have stuck to the bottom of the dish. Reduce this mixture to half and pour into a gravy boat. This is the ideal accompaniment to your beautiful dry aged beef meal.
Preferences
Some people prefer BBQ prime rib. Grilled prime rib must be cooked over low heat, with a tasty home made prime rib rub. It is somewhat more difficult than roasting but any good cook's catalog or recipe book will guide you through the process.
