Low fat snacks: Chocolate-Cherry Snack Bars
Ingredients: 2 1/2 cups unsweetened wheat cereal puffs
1/2 cup pecan nuts (chopped medium fine)
1/3 cup salted,
Roasted pepitas
1/4 cup dried cherries/cranberries (coarsely chopped)
2 tablespoons sesame seeds
1 tablespoon ground flaxseeds
1/2 cup honey
1/2 teaspoon vanilla
1/8 teaspoon salt
1/2 cup mini semisweet chocolate chips/ finely chopped bittersweet chocolate Method:
- Preheat the oven to 300 degrees F.
- Line an 8 inch square pan with parchment paper and allow the paper to overhang on both sides.
- Combine cereal, pecan nuts, cherries, sesame seeds and flaxseeds in a large bowl.
- Add vanilla, honey and salt to a small saucepan and warm over medium to low heat, stirring until the honey becomes fluid and the salt dissolves.
- Pour the honey mixture into the bowl with the dry ingredients and fold until combined and sticky or moist.
- Allow the mixture to cool for about 5 minutes.
- Fold in the chocolate chips until evenly distributed.
- Scrape the mixture into the prepared pan, using a fork to spread evenly.
- Press the mixture down firmly with the back of the fork.
- Bake until the top is golden brown or for about 35 minutes.
- Run a knife along the unlined sides of the pan to loosen the bars.
- Allow the bars to cool at room temperature for about an hour.
- Use the ends of the parchment to remove the bars from the pan.
- Remove the parchment and use a sharp knife to cut the bars into 16 squares. Author's notes: - Pepitas are hulled pumpkin seeds.
