Pomegranate Granita with Rosewater - Granita is one of the most easy, healthy desserts to make. If you are looking for a change from low fat ice cream recipes this summer, granita makes for an elegant, refreshing way to end a meal. Serves 6

Ingredients

What you need
-The kernels of 4 large pomegranates (see tip below)
-85 grams of sugar
-Rosewater
-A sprinkle of lemon juice

-Place the pomegranate kernels in a blender or food processor and process until all the juice is released from the kernels. -Place the pomegranate puree in a fine sieve with a bowl underneath to catch the juice. Press down hard with a spoon to force as much juice as you can out of the puree and into the bowl beneath. Do this repeatedly until the pulp left in the sieve is relatively dry. -Tip the pomegranate juice into a pot and add the sugar. Place over high heat and bring to a boil, stirring frequently until the sugar has dissolved. -Taste and add more sugar until the desired level of sweetness is reached, then reduce to a simmer and cook for 5 minutes or until the mixture is reduced by about a third. Remove from the heat and leave the mixture to cool. -Pour the mixture into a wide, shallow plastic container and place in the freezer. When the mixture begins to freeze take a fork and scrape it through the granita to fluff up the ice crystals as they form. Continue to do this every 20 minutes until the mixture has completely frozen. -Divide the granita between glasses and drizzle with a very small amount of rosewater (no more than half a teaspoon per serving) and top with fresh lemon juice to taste. To open a pomegranate, take a small, sharp knife and make 5 slashes from the pointed top end to the bottom of your pomegranate, turning it a little less than a quarter turn between each cut.
Be careful not to cut too deeply through the skin or you will cut into the seeds which will start to leech out juice. Place your thumb underneath the skin at the top of one of your cut sections and gently pull downwards to prise the skin off. Do this over a bowl to catch the seeds and continue until you have opened up all five flaps of skin. Place the seeds in a bowl of water and gently shake the seeds with your hands to separate them.
