How to make "chicken and rice casserole"

After a long hard day at work or out in the cold, there can be nothing better than coming home to a tasty meal. Just follow the simple instructions to learn how to do this for yourself.

You will need

Ingredients
6 chicken breasts (ideally use skinless and boneless)
400ml or ¾ pint water
150ml or ¼ pint white wine
Salt and pepper to season
½ teaspoon curry powder
1 medium sized onion, cut into slices
2 sticks of celery, sliced
750g of button mushrooms, sliced
50g butter
250g long grain rice
125g sour cream
1 x 300g can of chicken or mushroom soup
Equipment needed
2 Skillets or deep sided pans
Strainer
Knife Other equipment
Chopping board
Casserole dish

Method

How to make your chicken and rice casserole
First, place the chicken breasts into the large skillet and add the salt, pepper, curry powder, sliced onions and celery.
Cover with water and wine.
Place the lid onto the skillet and place onto the stove, allow this to simmer for one hour.
Remove from heat.
Strain the liquid from the pot but retain this for later use. Cut the chicken into bite sized pieces.
Sauté mushroom
Into the second skillet, gently heat the butter over a medium heat.
Sauté the sliced mushrooms until they are light brown in colour.
Add the rice and stir until all the butter is absorbed.
Add the liquid from earlier and cook the rice for approximately 15 minutes. Into the casserole dish
Place the chicken into the bottom of the casserole dish, add the onions from earlier and once cooked, add the rice and mushrooms.
Mix the sour cream and soup together and add this to the casserole dish.
Make sure all the ingredients are evenly combined and cover with the lid.
Bake in a preheated oven at 375F or 190C for 45 minutes.
Remove the lid and continue baking for a further 15 minutes.
This recipe will serve 6 to 8 people.
Added taste
For an added taste to your chicken and rice dishes, try adding your favourite cheese.
Just add some grated cheese during the final stage, when you remove the lid for an extra little colour and flavour. Crock pot or slow cooker option
This chicken and rice casserole recipe can be prepared before you go to work or even cooked in a crock pot or slow cooker during the day to be ready for your return.
