Pan seared scallops

To make scallops the American Test Kitchen way, purchase dry scallops. Season them with a little black pepper.
Leave the scallops to stand while you heat a little oil in a pan, until it is hot enough to smoke.
Add the scallops and fry for about two minutes, until they are browned.
Do not move them while frying.
When they are browned, flip the scallops, add a little butter to the pan and baste for about a minute.
Serve the scallops with a wedge of lemon and a little salad to make a delicious starter.

Among the favourite country cooking recipes is the char-grilled pork chops - a classic piece of American cooking.
First, make a sauce by mixing together molasses, mustard, ketchup, cider vinegar and brown sugar. Simmer the sauce for about five minutes.
Grill the pork chops on a barbeque for about 25 minutes, brush with a little bit of the sauce and cook for a further seven minutes.
Serve with a baked potato and some salad for a wonderful rustic main course.

These delicious little cakes taste fantastic, appeal to all ages and are very simple to make.
First, pre-heat the oven to 200C (350F, gas mark 7).
Then, whisk cocoa powder, warm water and a little vanilla essence until it is smooth.
Continue to whisk as you add melted chocolate, melted butter and oil. Add two eggs and two egg yolks and continue to whisk until smooth. Add sugar, and fold in flour using a spatula.
Scrape the mixture into a baking tray and cook for about 35 minutes.
Once they are baked, remove from the oven and allow to cool for around an hour.
Finally, cut into squares of about two inches and serve with cream or vanilla ice cream.
