How to cook roasted carrots?
The best way to cook roasted carrots to make them a delicious addition to any meal. When cooked correctly, these modest vegetables can add a splash of colour and a beautiful zing to a meal.

Roasted carrots are a different way to cook carrots. While it takes a bit longer than the traditional method of throwing them in a pan of boiling water, it can be worth going the little extra mile when you taste the end result.
Preheat the oven
Just as when you are cooking roast potatoes, it helps to get the oven nice and hot before beginning by turning it up to around 200 degrees.
Chop the carrots
Baby carrots work best. However, if you cannot get your hands on them, then it is fine to take a regular supermarket bag of carrots and chop them into rectangular shapes, around two to three inches in size.

Seasoning
Once the carrots have been chopped and washed, season them lightly with salt and pepper and put them in a large roasting tin.
Sprinkling
Then, sprinkle them liberally with some honey and put them in the oven. Check regularly so that you can turn them and make sure that they are not burning or sticking to the roasting tin.
Hint
If necessary, add a little bit of water to the tin in order to stop them from burning.
Cooking time
Cook the carrots - and these are suitable to add to a vegetarian roast - for between 30 and 40 minutes, depending on how much bite you like them to have.
Alternatives
There are many other ways in which to spice up roasted carrots, even if you decide that you do not need or always want the sweetness of the honey.
Carraway seeds
Carraway seeds add a nice crunch and can be added for the last ten minutes of the cooking time. You only have to sprinkle them over the vegetables when the tin is still in the oven.
Parsnip
Parsnip recipes can be adapted in a similar fashion and both carrots and parsnips are an ideal side-dish to any roast dinner recipes.
