How to make a pork tenderloin marinade

Cooking pork that has been marinated is a delicious way to release the juices and make the meat even more tender. Pork lends itself to a range of flavours from around the world.

Asian style marinade

Pork loins marinated in Asian flavours are particularly flavoursome. This style of pork marinade consists of the following ingredients: - 1lb of pork tenderloin,
- 1/2 cup of soy sauce,
- 1/4 cup of sake,
- 2 tablespoons of brown sugar,
- 1 tablespoon of chilli sauce,
- 1 garlic clove,
- 1 pinch of ginger (ground or fresh). Directions - Add the soy sauce, sake, brown sugar and chilli sauce to a large bowl.
- Finely chop the garlic and grate a small amount of ginger.
- Add these to the liquid ingredients and stir well.
- Place the piece of pork in the marinade and cover with tin foil or cling film.
- Refrigerate for a minimum of three hours.
- Pre-heat oven to 200 degrees, place the pork on a baking tray and pour over the marinade.
- Cook for 25-30 minutes until the pork is tender, turning the meat once and basting with the juices during cooking.
- Cut into 1 1/2-inch slices and serve with stir-fired vegetables and noodles.

Marinated grilled pork tenderloin

Another delicious way to cook pork loin is to marinade and then grill. You will need: - 1lb of pork tenderloin,
- 1/2 cup of soy sauce,
- 1/2 cup of dry sherry,
- 1/2 cup of honey,
- 1/4 cup of olive oil,
- 1/4 cup of rice wine vinegar,
- 2 tablespoons of fresh orange juice,
- 1 1/2 tablespoons of fresh minced rosemary,
- 1 tablespoon of minced shallots, and
- 1 teaspoon of fresh minced ginger. Directions - Place the tenderloin or medallions in a bowl.
- In another bowl, combine soy sauce, sherry, honey, oil, vinegar and orange juice, whisking until blended.
- Stir in the minced rosemary, shallots and ginger.
- Pour over the pork, cover with cling film and leave at room temperature for two hours.
- Cook on a barbecue grill or a griddle pan for approximately 18 minutes, turning regularly.
- Transfer to a platter and slice, pouring over any residual marinade.
- Serve with a fresh green salad.
