Egg and spinach frittata
- 2 eggs, beaten slightly
- 1 cup spinach
- 1 tomato, diced
- 1 tablespoon oil

- 1/2 cup cheese
Directions:
- Place the oil in a small non-stick pan. Place the tomatoes and spinach in the pan to cook until the spinach is wilted.

- Cook the frittata for one minute or until the bottom of the eggs has set. Take a spatula and loosen the sides. Sprinkle the cheese on top.
- Place the pan in a hot 400 degree oven and bake until the cheese is melted and the eggs are done.
