What are the simple chicken breasts recipes?
Chicken breasts are a healthy and simple option for dinner. Low in fat and quick to cook, this meat is extremely versatile, and works in many different styles of cuisine. This article contains three quick and easy chicken recipes, each using skinless and boneless breasts, and designed to serve two people.
Stuffed chicken breast
Ingredients -2 chicken breasts -2 tbsp cranberry sauce -150g gorgonzola cheese -12 slices of pancetta -Olive oil -Salt and pepper Method - Preheat the oven to 200C/gas 6. - Place each chicken breast between two pieces of clingfilm, and bash with a meat mallet until it is ½ cm thick. Remove clingfilm. - Spread 1 tbsp cranberry sauce over the breast, and add a piece of gorgonzola. Season and roll up to enclose the cheese. - Place 6 pieces of pancetta side by side on a board, overlapping slightly. Place a rolled chicken breast on the pancetta and roll tightly. - Repeat with the remaining pancetta and chicken. - Place the chicken on a baking tray, drizzle with olive oil, and bake for 20-25 minutes. - Serve with steamed vegetables, salad, chips, or boiled potatoes.
Chicken marengo
Ingredients
-2 chicken breasts, diced
-Flour for dusting
-Salt and pepper
-Olive oil
-1 onion, diced
-1 garlic clove, crushed
-1 tin of chopped tomatoes
-1 tbsp tomato puree
-125ml chicken stock
-1 tsp dried thyme
Method
- Season the flour and toss the chicken pieces until coated.
- Heat the olive oil in a deep frying pan, and fry the chicken until lightly golden.
- Add the onions and garlic, and soften for two to three minutes.
- Add the chopped tomatoes, tomato puree, stock and thyme, and then simmer for 10-15 minutes, or until the chicken is cooked. Season if necessary.
- Serve with pasta.
Chilli chicken
For the sauce -4 garlic cloves -2.5cm piece of fresh root ginger, peeled -1 red chilli, de-seeded -½ red pepper -2 tomatoes, sliced -5 tbsp water -2 tbsp tomato ketchup -1 tsp brown sugar For the chicken -1 tbsp groundnut oil -2 chicken breasts, sliced -1 courgette, sliced -½ red pepper, sliced -2 tbsp light soy sauce -2 spring onions, sliced lengthwise Method - For the sauce, roughly chop the vegetables, and then blend the sauce ingredients in a food processor until smooth. - Heat a wok until smoking, add the oil, and then the chicken. Stir fry until lightly golden, then add the courgette and pepper. Stir fry for one to two minutes more. - Add the chilli sauce and stir fry until the chicken is cooked. - Season with the soy sauce and serve garnished with spring onions. This recipe is great with noodles.
