How to make fortune cookies

Many people will want to learn how to make Chinese fortune cookies, if they want to give a touch of authenticity to a homemade Chinese meal. If you want to make these advice giving snacks, this article will show you how.

Choose the fortunes

The first step to making personalised fortune cookies is writing the fortunes. Write the fortunes on small pieces of paper of about three inches by one inch. While you are doing this, pre-heat the oven to 300F, 150C, gas mark four. After you have written the fortunes, grease a baking tray. Alternatively, use a non-stick baking tray.

Mixing

In a large bowl, mix two egg whites, a few drops of vanilla extract, a little almond extract and three tablespoons of vegetable oil. Beat the mixture until it is frothy, but do not beat it for so long that it becomes stiff.

Flour preperation

Sift eight tablespoons of flour into a bowl, along with one and a half tea spoons of corn starch, a pinch of salt and eight tablespoons of sugar. Stir the mixture while added three teaspoons of water.

Making batter

Add the flour mixture to the egg mixture and stir until you have a smooth batter. Ensure that while the batter is not runny, it slides easily off of a wooden spoon. Moreover, if you want to add any colourings, it should be done while mixing the batter. Popular options include green, red and yellow food colourings.

Arranging the batter

Next, place tablespoons of the batter onto the baking tray, ensuring that each is about three inches in diameter. You should also leave a gap of around three inches between each cookie.
Bake the cookies for around 15 minutes, until the outer edge turns golden brown.

Shaping the cookies

Once you have baked the fortune cookies for around 15 minutes, they should be easy to remove from the baking tray with a spatula. To get that distinctive fortune cookie shape, place the cookie in your hand, place the fortune in the centre of the cookie, and fold the cookie over. Finally, gently pull the edge of the cookie downwards.
You should do this as quickly as possible but remember to be careful when you shape your homemade fortune cookies.
