Chicken is one of the most popular ingredients around. It is low in fat and high in protein, and the smell of a roasting chicken is instantly comforting. A simple recipe for roast chicken
For an incredibly easy dinner, take a whole chicken and place half a lemon and a chicken stock cube in the cavity. Lightly butter the chicken and place in the oven at gas mark 6/200 C for 20 minutes per 500g plus 30 minutes. Whilst this is roasting, dice unpeeled potatoes into 1cm cubes, drizzle with oil, and sprinkle with rosemary and cook them in the same oven for 1 hour and ten minutes. Serve with carrots and buttered cabbage.

Chicken goujons Chicken goujons make excellent food for parties. Cut chicken breasts into long thin strips. Coat with flour, egg and breadcrumbs and fry in oil in a frying pan for four minutes. Place goujons onto a baking tray and bake at gas mark 4, 180 C for 15 to 20 minutes until cooked through. Chicken Kiev Chicken Kiev is a simple recipe that never fails to please. Take four chicken breasts and cut almost in half, leaving a hinge. Mix 230g butter and 3 chopped garlic gloves and the juice of one lemon. Place this mixture into the chicken breasts. Fold the breasts over and cover in flour, milk and breadcrumbs. Brown in a frying pan, and then bake in the oven at gas mark 6, 200 C for 20 minutes.
A dinner party recipe
Good recipes for dinner parties can be prepared in advance, leaving you time to enjoy the company of your guests. This recipe for chicken, cheese and cherry tomato bake from BBC Good Food, does just that. Take four chicken breasts and remove the skin. Stuff each breast with a slice of goat's cheese and a sprig of fresh thyme. Place in a shallow oven-proof dish. Take 500g cherry tomatoes and halve them. Scatter around the chicken and drizzle with olive oil and a splash of white wine. Bake in a preheated oven gas mark 5, 190 C for 25 to 30 minutes. This dish can be served hot or cold.
