How to cook a red snapper?

Grilled Red Snapper Recipe
Ingredients
4 Red Snapper fillets
3/4 cup extra virgin olive oil
1 teaspoon soy sauce
1 clove garlic ( minced)
1/4 cup tomato paste/ketchup
1/4 cup white wine
1 teaspoon lemon juice
salt and pepper to taste
Method: How to cook red snapper
Combine 1/2 cup of the olive oil with the soy sauce and pour onto the snapper fish fillets.
Allow to marinate for at least 30 minutes.
Heat the remainder of the oil in a medium skillet on medium to low heat.
Add garlic and saute for 2 minutes until lightly browned.
Add the tomato paste and the wine, carefully.
Cook until the sauce thickens, stirring constantly for 5 minutes.
Stir in lemon juice and add salt and pepper to taste.
Preheat the barbecue or broiler on medium heat.
Grill the fish, cooking the snapper until the fish is flaky, turning only once.
Cooking time should be about nine minutes per inch of thickness.
Serving tips:
Serve grilled red snapper with sauce, with pasta, or white rice.
Baked Red Snapper Recipe
Ingredients
1 whole red snapper Marinade
1/2 cup olive oil
1/2 cup white wine
1/8 teaspoon pepper
1/4 teaspoon rosemary
1/4 teaspoon oregano
1/4 teaspoon dried parsley
Method:
Clean the fish thoroughly and lay it flat in a shallow baking pan.
Combine marinade ingredients and pour onto the fish.
Allow the mixture to rest in the fridge for 30 minutes.
Turn the fish on the alternate side, pour marinade on that side and allow to rest for 30 minutes.
Spoon off a good portion of the marinade for basting and bake at 375 degrees for 25 minutes.
Serving tips:
Baste the fish frequently while baking.
Serve whole with boiled potatoes, drizzle with lemon juice and garnish with fresh parsley.
